4 tomato on the vine tomatoes, chopped
2 Persian cucumber, chopped
1 red bell pepper, seeded and chopped
1/2 cup chickpeas
1/2 cup kidney beans
1/2 cup cannelini beans
2 tbsp fresh basil, chopped
2 tbsp green onion, chopped
4 Tbsp white wine vinegar
2 Tbsp olive oil
Himalyan salt to taste
Cracked black pepper to taste
1) Mix tomato, cucumber, bell pepper, chickpeas, beans, basil and green onion in a bowl.
2) In a separate bowl, whisk white wine vinegar, olive oil, salt and pepper until emusified.
3) Pour dressing over the veggies and beans, and toss until well-coated. 4) Serve and enjoy!
