16 oz. cherry tomatoes, sliced in half
1/2 cup pitted olives
1/4 cup red onion, finely sliced
2 tbsp chopped parsley
4 tbsp lemon juice
2 tbsp extra virgin olive oil
Himalayan salt to taste
Ground black pepper to taste
1) Combine cherry tomatoes, olives, red onion, parsley, lemon juice and olive oil in a bowl and toss until well coated.
2) Add salt and pepper to taste.
3) Serve and enjoy!
