Baby Kale, Pomegranate, Persimmon, & Walnut Salad

Balsamic Vinaigrette Ingredients 

5 tbsp. balsamic vinegar
1/4 cup + 2 tbsp. extra-virgin olive oil
Himalayan pink salt and ground, black pepper to taste  

Balsamic Vinaigrette Directions 

1) Add ingredients to blender or food processor and combine until emulsified. 
2) Adjust salt and pepper to taste.  
3) Serve with Baby Kale Salad and enjoy!   

Baby Kale Salad Ingredients 

4 cups baby kale
1/2 cup pomegranate seeds
1 persimmon, sliced into 1/4 inch thick slices
1/4 cup walnuts, roughly chopped
Balsamic Vinaigrette
Himalayan pink salt and ground, black pepper to taste  

Baby Kale Salad Directions 

1) In a large salad bowl, combine baby kale, pomegranate seeds, persimmon, and walnuts.  
2) Toss salad with enough Balsamic Vinaigrette to coat.  
3) Adjust salt and pepper to taste.  
4) Serve and enjoy!
