Meyer Lemon Vinaigrette Ingredients

1/4 cup Meyer lemon juice
1/4 cup + 2 tbsp. extra-virgin olive oil
Himalayan pink salt to taste

Meyer Lemon Vinaigrette Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt to taste.
3) Serve with Candy Cane Beet Salad & enjoy! 

Candy Cane Beet & Watermelon Radish Salad Ingredients

4 cups organic arugula
1 organic candy cane beet, thinly sliced
1 organic watermelon radish, thinly sliced
1/4 cup organic, raw pistachios
1/2 cup sugar snap peas, trimmed and cut in half
4 hardboiled eggs, sliced
1/2 an avocado, chopped
Meyer Lemon Vinaigrette

Candy Cane Beet & Watermelon Radish Salad Directions

1) In a large salad bowl, combine arugula, candy beet, watermelon radish, pistachios, sugar snap peas, hard boiled eggs and avocado.
2) Toss salad with enough Meyer Lemon Vinaigrette to coat.
3) Serve and enjoy!
