Curried Peach Soup Ingredients

3 large, ripe organic peaches, chopped
1 shallot, peeled
1 14-oz. can organic, full fat coconut milk (BPA-free, gum-free)
8 oz. organic chicken broth (homemade or sodium-free boxed)
2 tbsp. lemon juice
2 tsp. curry powder
1 tbsp. coconut nectar
1 jalapeno
Himalayan pink salt to taste
Chopped peaches, Italian parsley, extra-virgin olive oil and red onion for garnish on top of soup (optional)

Curried Peach Soup Directions

1) Add ingredients other than garnish to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt to taste.
3) Refrigerate until chilled.
4) Remove from refrigerator and add garnish of your choice.
5) Serve and enjoy!

Makes approximately 5 1/2 cups of soup.
