Pumpkin Chipotle Hummus
Pumpkin Chipotle Hummus Ingredients
1-15 oz. can of organic chickpeas, drained, rinsed, and patted dry (BPA-free)
1-15 oz. can of organic pumpkin puree (BPA-free)
1/4 cup olive oil
2 tbsp. coconut nectar
1 chipotle chili in adobo sauce
1 tsp. adobo sauce
1/2 tsp. chili powder
1/2 tsp. cumin
1/8 tsp. smoked paprika
Himalayan pink salt to taste
Vegetables for dipping
Pumpkin Chipotle Hummus Directions
1) Add chickpeas, pumpkin puree, coconut nectar, chipotle chili, adobo sauce, chili powder, cumin, smoked paprika, and salt to a food processor and process until smooth.
2) Leaving food processor on, slowly drizzle olive oil into hummus until fully incorporated.
3) Adjust salt to taste.
4) Serve with your favorite vegetables and enjoy!
