Delicata Squash Rings with vegan Walnut Sage Pesto

Walnut Sage Pesto Ingredients

1 1/2 cup organic Italian parsley, tightly packed
1/2 cup organic sage, tightly packed
2 garlic cloves
1 cup walnuts
1 cup walnut oil
3 tbsp. extra-virgin olive oil
1/4 cup lemon juice
1/4 cup nutritional yeast
Himalayan pink salt to taste

Walnut Sage Pesto Ingredients

1) Add parsley, sage, garlic, walnuts, lemon juice, nutritional yeast, 1/4 cup of walnut oil and salt to a food processor and begin to process on low.
2) Leaving food processor on, slowly drizzle remaining walnut oil and olive oil into pesto until all ingredients are fully incorporated. 
3) Adjust salt to taste. 
4) Transfer to a serving dish. 
5) Set aside for use with

Makes approximately 2 1/2 cups.

Delicata Squash Rings Ingredients

1 9-inch delicata squash
Extra-virgin olive oil
Himalayan pink salt and ground, black pepper to taste

Delicata Squash Rings Directions

1) Preheat oven to 375 degrees F.
2) Cut delicata squash in half lengthwise and remove seeds.  Then, slice squash crosswise into 1/4 inch thick rings.
3) On an aluminum foil-lined baking sheet, toss delicata squash slices with enough olive oil to coat, and salt and pepper.
4) Place baking sheet in the center of the oven and roast squash, for 20 minutes. Then flip squash pieces and roast for another 10 minutes, or until tender and lightly golden.
5) Remove squash from oven and adjust salt and pepper to taste.
6) Serve and enjoy!
