Make This Mediterranean Chopped Salad Now

I've been making this Mediterranean Chopped Salad for years and it's one of my all time favorite salad recipes. It's not only got a yummy combo of veggies from cucumber, artichoke hearts, hearts of palm, red onion, tomatoes, and basil, it's tossed in a light and tangy Meyer lemon vinaigrette that you're going to love. The best part about this salad is that it's not only delicious, it's really good for you too! It's packed with fiber, antioxidants, vitamins and minerals and it's rich in healthy monounsaturated fat from a trio of avocado, olives, and extra-virgin olive oil.  This salad is also incredibly easy to make and worth the minimal effort -- no doubt it will top your list of favorite salad recipes too! 

Mediterranean Chopped Salad

Makes approximately 2 1/2 cups

Ingredients

Meyer Lemon Vinaigrette

  • 1/4 cup Meyer lemon juice

  • 1/4 cup + 2 tablespoons extra-virgin olive oil

  • Himalayan pink salt to taste

Chopped Salad

  • 1/2 cup Persian cucumber, chopped

  • 1/2 cup artichoke hearts, chopped

  • 1/2 cup hearts of palm, chopped

  • 1/2 cup tomatoes, chopped

  • 2 tablespoons Kalamata olives, chopped

  • 2 tablespoons red onion, chopped

  • 1 tablespoon capers, chopped

  • 1/2 of an avocado, chopped

  • 1 teaspoon fresh basil, chopped

Directions

Meyer Lemon Vinaigrette

  1. Add ingredients to Vitamix or other high-speed blender and blend until emulsified.

  2. Adjust salt to taste.

  3. Serve with Mediterranean Chopped Salad and enjoy!

Mediterranean Chopped Salad

  1. In a large salad bowl, combine cucumber, artichoke hearts, hearts of palm, tomatoes, olives, onion, capers, avocado, and basil.

  2. Toss salad with enough Meyer Lemon Vinaigrette to coat.

  3. Serve and enjoy!
