Raspberry Cashew Butter Balls

I love nut butters, but unless you buy them in little individual packets, they can be hard to transport. That’s why I created these Raspberry Cashew Butter Balls! Even though these little bites of bliss are loaded with cashew butter, they’re totally portable and make the perfect nutrient-rich snack – cashews are a great source of protein, fiber, monounsaturated fat, magnesium, manganese, phosphorus, zinc and iron! Coconut and chia seeds contribute additional healthy fats, while the chia seeds up the fiber and protein content. And those freeze-dried raspberries not only add a delicious flavor, they’re a good source of vitamin C and fiber too! If you aren’t sold on these yummy treats yet, you will be when you realize how easy they are to make!

Raspberry Cashew Energy Bites
Makes about 14 balls

Ingredients:

3 Tbsp organic, raw cashew butter
1/4 cup of raw cashews
1/4 cup shredded organic coconut
2 Tbsp chia seeds (pre-soaked in 4 Tbsp water)
1/2 cup freeze dried unsweetened organic raspberries (+ more for rolling balls in, if desired)
stevia drops to taste (optional)

Directions:

Add all ingredients to food processor. Process until ingredients are thoroughly combined.
