Grilled Salmon with Lemon, Dill, Capers

Salmon Ingredients

4, 4-oz. salmon fillets, 1-inch thick
1 tbsp extra-virgin olive oil
2 lemons
4 sprigs dill, torn
2 tbsp capers, chopped
Sea salt to taste
Cracked black pepper to taste

Arugula Ingredients

8 cups arugula
1 lemon, juiced
2 tbsp extra-virgin olive oil
Sea salt to taste
Cracked black pepper to taste

Directions

1) Preheat grill to medium heat.
2) Brush salmon fillets with olive oil.
3) Grill salmon for approximately 4 minutes, then flip and cook for another 3-4 minutes, or until opaque or just cooked all the way through.
4) Remove fish from grill.
5) Squeeze lemon on top of fish, and sprinkle with sea salt and cracked black pepper.
6) Distribute capers and dill over each piece of fish.
7) Serve on top of a bed of arugula tossed in lemon juice, olive oil, sea salt and cracked black pepper, and enjoy!
