Horseradish Mustard Vinaigrette Ingredients

1/4 cup red wine vinegar
1/4 cup + 2 tbsp. extra-virgin olive oil
2 tbsp. Annie’s Naturals, Organic Horseradish Mustard
1 tbsp. Bubbies dill pickle juice
2 tbsp. fresh parsley, chopped
Himalayan pink salt and ground, black pepper to taste

Horseradish Mustard Vinaigrette Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt and pepper to taste.
3) Set aside for use with Caper & Pickle Potato Salad. 

Caper & Pickle Potato Salad Ingredients

3 pounds red-skinned potatoes
1/2 cup of Bubbies dill pickles, chopped
1/4 cup of chives, chopped
1.5 tbsp. capers, chopped
Himalayan pink salt and ground, black pepper to taste
Horseradish Mustard Vinaigrette

Caper & Pickle Potato Salad Directions

1) Add potatoes to a pot and cover with cold water. Bring to a boil and then immediately reduce heat to medium-low and simmer potatoes for approximately 7-8 minutes, or until tender.
2) Drain potatoes and set in the refrigerator to cool.
3) Once potatoes are cool, cut each potato into 8 pieces.
4) Toss potatoes, pickles, chives and capers with enough Horseradish Mustard Vinaigrette to coat.
5) Adjust salt and pepper to taste.
6) Serve and enjoy!
