Spiced Roasted Heirloom Carrots with Cumin Tahini Sauce

Cumin Tahini Sauce Ingredients

1/4 cup lemon juice
1/4 cup tahini paste
1/4 cup apple cider vinegar
1/4 cup + 2 tbsp. extra-virgin olive oil
1/2 cup purified water
1/4 cup nutritional yeast
1 tbsp. Annie’s Organic Horseradish Mustard
1 tsp. smoked paprika
1 tbsp. + 1 tsp. cumin
1/4 tsp. chili powder
2 tsp. coconut aminos
1 clove garlic
Himalayan pink salt to taste

Cumin Tahini Sauce Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt and pepper to taste.
3) Serve and enjoy!

Carrots Ingredients

2 lbs. heirloom carrots, peeled
3 tbsp. extra-virgin olive oil
1/2 tsp. cumin
1/8 tsp. crushed red chili flakes
Himalayan pink salt to taste
Cumin Tahini Sauce

Carrots Directions

1) Preheat oven to 375 degrees F.
2) Whisk olive oil, cumin, chili flakes, and salt in a bowl until combined.
3) Toss carrots with olive oil-spice mixture on an aluminum foil-lined baking sheet, making sure to coat all of the carrots.
4) Place baking sheet in the center of the oven and roast carrots, tossing occasionally, until tender and golden, about 50 minutes.
5) Remove carrots from oven and adjust salt to taste.
6) Drizzle with Cumin Tahini Sauce.
7) Sprinkle with fresh herbs, if desired.
8) Serve and enjoy!
