Spirulina Tuna Salad Wrap



2 Spirulina Wraps from Erewhon Market (or other nutrient rich, gluten-free wrap)
8 oz. dairy free organic albacore tuna salad (homemade or purchased from your local organic market)
2 cups arugula
2 handfuls microgreens
4 tomatoes on the vine, sliced
Lemon juice


1) Place each spirulina wrap on a plate.
2) Lay 1 cup of arugula on top of each spirulina wrap.
3) Layer tuna salad, tomatoes and microgreens on top of arugula bed. Distribute evenly amongst wraps.
4) Squeeze lemon juice over greens, tuna and tomatoes. 
5) Roll into a wrap and enjoy!
