Dairy-Free Kale Caesar with Pepitas & Grilled Chicken

Vegan Caesar Ingredients 

1/4 cup lemon juice
1/4 cup tahini paste
2 tbsp. apple cider vinegar
1/4 cup + 2 tbsp. extra-virgin olive oil
1/4 cup purified water
1/4 cup nutritional yeast
1 tbsp. Annie’s Organic Horseradish Mustard
1 tsp. coconut aminos
1/2 tsp. lemon rind, zested
1 clove garlic
Himalayan pink salt and ground, black pepper to taste

Vegan Caesar Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt and pepper to taste.
3) Serve with Vegan Kale Caesar and enjoy!  

Dairy-Free Kale Caesar w/ Pepitas & Grilled Chicken Ingredients

4 cups organic kale, chopped
1 avocado, smashed
1/4 cup raw pumpkin seeds
1/4 cup nutritional yeast
8 oz. organic chicken breast, grilled & sliced
Vegan Caesar
Himalayan pink salt and ground, black pepper to taste

Dairy-Free Kale Caesar w/ Pepitas & Grilled Chicken Directions

1) In a large salad bowl, toss kale, avocado, pumpkin seeds, nutritional yeast, and chicken with enough Vegan Caesar to coat. 
2) Adjust salt and pepper to taste.
3) Serve and enjoy!  

Serves 2.
