Sweet Potato Nachos



5 1/2 cups organic sweet potatoes, sliced 1/4 inch thick
2 tbsp. olive oil
1/4 cup black beans
1/2 cup tomatoes, chopped
1/2 cup guacamole
2 tbsp. fire roasted diced green chiles
2 tbsp. cilantro, chopped
2 tbsp. jalapeños
Himalayan pink salt and ground, black pepper to taste


1) Preheat oven to 375 degrees F.
2) Add sweet potatoes to an aluminum foil lined baking sheet and toss with olive oil, salt and pepper.
3) Bake sweet potatoes for 40 minutes, or until tender and lightly golden. 
4) Remove sweet potatoes from the oven and top with black beans, tomatoes, guacamole, green chiles, cilantro and jalapeños. 
5) Serve and enjoy!
