Chopped Kale Salad + Persimmon, Pomegranate & Hazelnuts
Hazelnut Vinaigrette Ingredients
4 tbsp. good quality balsamic vinegar
1/4 cup + 2 tbsp. organic hazelnut oil, preferably cold pressed & unrefined
1/4 cup organic, full fat coconut milk
1 tbsp. + 1 tsp. coconut nectar
Himalayan pink salt to taste
Hazelnut Vinaigrette Directions
1) Add ingredients to Vitamix or other high-speed blender and blend until ingredients are emulsified.
2) Adjust salt to taste.
3) Serve with Chopped Kale Salad and enjoy!
Chopped Kale Salad Ingredients
4 cups organic Lacinato kale, thinly chopped
1/4 cup organic, raw hazelnuts, roughly chopped
1/2 cup pomegranate seeds
1/2 cup Fuyu persimmon, chopped
Chopped Kale Salad Directions
1) In a large salad bowl, combine kale, hazelnuts, pomegranate seeds, and persimmon.
2) Toss salad with enough Hazelnut Vinaigrette to coat.
3) Serve and enjoy!
Serves 2 as a meal-sized portion.
