Cold Spicy Coconut Greens Soup Ingredients

2-13.5 oz. cans organic light coconut milk
2 tbsp. coconut water kefir
1 cup purified water
1/2 cup lemon juice
2 shallots
1 cup cucumber, peeled and chopped
1 cup fresh organic spinach
1 cup fresh organic basil
1 cup fresh organic parsley
1 jalapeno  
Himalayan pink salt to taste

Cold Spicy Coconut Greens Soup Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt to taste.
3) Refrigerate until chilled.
4) Remove from refrigerator and stir any ingredients that have separated together.
5) Pour into bowls or glasses and enjoy!  

Makes approximately 8 cups.
