Fava Bean Sauté with Chili Flakes & Olive Oil

4 cups of fava beans (already removed from pods, with skins on)
2 tbsp. extra-virgin olive oil
1/2 tsp. red pepper flakes
Himalayan pink salt to taste
Water for boiling
Ice water bath

1) Bring a pot of water to a boil. Add fava beans and blanch for 2 minutes.
2) Drain fava beans and immediately transfer to an ice water bath.
3) Dry fava beans and remove peels. This will yield approximately 2 cups of beans.
4) Heat 2 tbsp. olive oil in a sauté pan over medium heat. Add fava beans, red pepper flakes, and salt and sauté until beans are tender, about 6-7 minutes.
5) Remove from heat.
6) Adjust salt to taste.
7) Serve and enjoy!

Makes approximately 2 cups.
