Spinach & Candy Cane Beet Salad with Avocado, Strawberries & Blackberries


Strawberry Balsamic Vinaigrette Ingredients

1/4 cup good quality balsamic vinegar
1/4 cup + 2 tbsp. organic, cold-pressed, extra-virgin avocado oil
1/2 cup organic strawberries
1 tbsp. coconut nectar
Himalayan pink salt to taste

Strawberry Balsamic Vinaigrette Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until ingredients are emulsified.
2) Adjust salt to taste.
3) Serve with Spinach & Candy Cane Beet Salad and enjoy!

Spinach & Candy Cane Beet Salad Ingredients

2-6 oz. bags of pre-washed, organic spinach leaves
1/2 cup candy cane beets, thinly sliced
1/4 cup strawberries, sliced
1/4 cup blackberries
1/2 an avocado, sliced

Spinach & Candy Cane Beet Salad Directions

1) In a large salad bowl, combine spinach, beets, strawberries, blackberries and avocado.
2) Toss salad with enough Strawberry Balsamic Vinaigrette to coat.
3) Serve and enjoy!
