Peruvian Coconut Yogurt Parfait

Ingredients

6 oz. unsweetened coconut yogurt
2 scoops Vital Proteins Collagen Peptides
1 tsp. maca
1 tsp. vanilla
2 tbsp. cacao nibs
2 tbsp. sacha inchi, chopped
2 tbsp. shredded coconut
Whole Foods French Vanilla Stevia to taste

Directions

1) Mix coconut yogurt, collagen peptides, maca, vanilla and stevia in a bowl. Adjust stevia to taste.
2) Place half of the yogurt-maca mixture in a glass.
3) Add 1 1/2 tbsp. each of cacao nibs, sacha inchi and shredded coconut on top of the yogurt-maca mixture.
4) Add the remaining yogurt-maca mixture on top of the cacao nibs, sacha inchi and shredded coconut. 
5) Sprinkle remaining 1/2 tbsp. each of cacao nibs, sacha inchi and shredded coconut on top of the last layer of yogurt.
6) Refrigerate for a minimum of 30 minutes to set.
7) Serve and enjoy!
