Creamy Parsley Vinaigrette Ingredients

1 cup full fat coconut milk
1 tbsp. apple cider vinegar
1/4 cup extra-virgin olive oil
2 tbsp. coconut water kefir
2 tbsp. coconut aminos
1/4 cup lemon juice
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 cup fresh organic parsley, packed
Himalayan pink salt and ground, black pepper to taste

Creamy Parsley Vinaigrette Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until emulsified.
2) Adjust salt and pepper to taste.
3) Serve with Roasted Beets + Bibb Lettuce Salad and enjoy!

Roasted Beets + Bibb Lettuce Salad Ingredients

4 cups organic Bibb lettuce, separated into individual leaves
1 cup roasted beets, quartered
1/2 cup watermelon radish, thinly sliced and chopped
2 tbsp. organic fresh parsley, chopped
Creamy Parsley Vinaigrette
Himalayan pink salt and ground, black pepper to taste

Roasted Beets + Bibb Lettuce Salad Directions

1) In a large salad bowl, toss Bibb lettuce, roasted beets, and watermelon radish with enough Creamy Parsley Vinaigrette to coat. 
2) Adjust salt and pepper to taste.
3) Sprinkle with fresh parsley.
4) Serve and enjoy!
